Previous hazard corrected. facility in good shape. discussed the addition of Tuna to the allergen list and advised on proper procedure for utensils that come into contact with tuna. Also noticed an unopened bottle of scented bleach and advised not to use scented bleach for sanitizing of equipment,utensils or food contact surfaces as the scented bleach is not approved for that use.

Facility is in great shape. Alarms are on both the walk-in freezer and refrigerator. Sanitizer at the right concentration in wiping cloth bucket. Discussed the reason why splashless bleach is not approved.

Gravy from breakfast had been set in the walk-in refrigerator to cool. It was left uncovered and was approximately 3 inches deep. This appears to be set up properly for adequate cooling.
