The gallon of concentrated sanitizer( Ammonium Quaternary) needs to be monitor to ensure that, they are change as soon as they are empty. These will ensure 200 ppm of sanitizing solution is present in the buckets and bottles of sprays use to sanitize in the kitchen.,

Observation: There was no sanitizing solution present in the spray bottle, use to sanitize the kitchen counters.
Correction: Ensure gallon of concentrated sanitizing agent is change as soon as is empty at the station where is mix with water and dispense. Test for 200 ppm concentration, of ammonium quaternary solution every time is collected at the dispensing station.
- Indoor Areas - Surface Characteristics
Observation: The indoor wall material located where the trash can is store is made out of wood and does not meet the standard of: 1. smooth, durable and easily cleanable 2. nonabsorbent
Correction: Refinish or replace the wall material at the area designated so it is: 1. smooth, durable and easily cleanable 2. nonabsorbent. Paint wood surfaces with polyurethane.

Non-critical violations must be corrected within 30 days. Notes: The 3 VAT sink is supplied with soap and paper dispenser, according to PIC is not in use and been there since long time ago. REMOVE soap and paper dispenser from dish washing area and do not wash hands in 3 compartment sink.

Observation: Kitchen floors in the corners and underneath 3 compartment sink noted in need of cleaning.

Observation: There was no temperature measuring device located in the white reach-in refrigerator/freezer (second building).

Non-critical violation must be corrected within 30 days. Second building kitchen inspected as well, all food contact surface equipment is taken to the main kitchen for cleaning, all cooking also taking place in the main kitchen.
