NOTE: OPERATOR STATED THAT HE WOULD REPLACE THE SMALLER HOME-STYLE UNIT WITH ONE THAT IS LARGER AND MORE OF A COMMERCIAL-GRADE TYPE UNIT THAT WILL COLD-HOLD FOODS PROPERLY.
You may need to order more Micro-Chlor product- you are down to one box and this is the only approved detergent/sanitizer since you only have a two compartment sink for washing/ sanitizing dishes/utensils.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Observed eggs in the small reach-in unit cold-holding at improper temperature. It was discussed with the operator that the high-protein foods such as eggs, gravy, etc.... be removed from this unit. This unit may only be used for non-potentially hazardous foods- such as breads, muffins, danishes, bagels, etc....
    OPERATOR TRANSFERRED THE FOOD AT TIME OF EVALUATION.
    Correction: REPLACE THE SMALL REFRIGERATION UNIT WITH ONE THAT IS OF A COMMERCIAL STYLE- THIS UNIT IS TURNED TO THE HIGHEST SETTING AND IS NOT CAPABLE OF COLD-HOLDING FOODS PROPERLY. PLEASE CONSIDER GETTING A LARGER CAPACITY UNIT AS THE EXISTING UNITS ARE OVER-LOADED AND THIS MAY CONTRIBUTE TO TEMPERATURE HOLDING PROBLEMS.
  • Dressing Areas and Lockers - Designation
    Observation: Observed personal medication (Dr. Label) and Pepto Bismal. Lockers or other suitable facilities are not provided for employees clothing and other possessions.
    Correction: Medicines are strictly prohibited from common storage of foods used for customers. Provide lockers or other suitable facilities for the orderly storage of employees clothing and other possessions
