    Observation: Observed 2% milk in storage refrigerator at 43 degrees and Half & Half in storage cabinet at 74 degrees.
    Correction: Potentially hazardous food (in this case, dairy products) must be maintained at 41 degrees or less. Correct by discarding the above referenced milk and Half & Half and ensuring that these products are stored in a manner that will maintain a temperature of 41 degrees or less. Discarded.

Chlorine test papers to be used for bleach. Chlorine 100 ppm, Quat 200 ppm. It appears that display refrigerator air flow is such that bottom shelf does not hold food at 41 F or below. Either increase air flow or keep eggs on time control and discard after breakfast. 30 day permit issued. I expect the violations to be corrected prior to April 28, 2014. Reinspection to be conducted prior to this expiration date.

    Observation: Eggs found at 49-50 F inside unit on breakfast counter.
    Correction: Housekeeping Supervisor discarded.

    Observation: Linen in drawer.
    Correction: Remove. Use a cleanable/nonabsorbent material.
