Observation: Plastic food storage containers were found stacked while wet after cleaning and chemical sanitization.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
- Critical: Backflow Prevention Device, When Required* (corrected on site)
Observation: Observed a hose attached to the mop sink faucet fixture. The hose extended below the flood rim level of the sink basin and no backflow prevention device was observed on the faucet. The person in charge (PIC) disconnected the hose and will only connect the hose to the faucet when it is being used.
Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

Recommend wearing hair restraint when preparing foods.Observed great handwashing & glove use.

Observation: One gallon of milk cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

Food is only hot held during service/ dispensing period. Some cooling of hot food for carry over, but only small volumes. Discussed cooling parameters and methods. Pasteurized juice used. Observed good date marking. Observed good hand washing and glove use. Employee health Form 1B used and signed. Discussed limiting staff access to kitchen. Discussed using temperature indicating tape in the dish machine and how to clean and sanitize in the 2 basin sink if needed.
