The operator provided metal probe thermometers, chlorine test strips and an Employee Health policy during today's inspection. No violations were noted at this time ( no foodservice/food prep was noted during today inspection). Opening date 5/23/15.
Note: During today's inspection the AC unit was noted not operable. The foodservcie facility windows were observed not screened or partially screened at the customer service area, unable to prevent entry of potential contaminants and entry of pests, into the foodservice areas (Repairs to the AC unit is pending at this time). The potential of increased heat and humidity within the facility during operating times may affect the employees welfare and refrigeration operating effectiveness without the use of air conditioning within the building ( It appears the building was not designed to operate without the use of air conditioning).
Also noted end caps were not provided in the light shields in the rear & front food service area.

  • Utensils - In-Use - Between-Use Storage
    Observation: Dispensing utensils improperly stored between uses (ice scoops were observed stored on top of the ice machine).
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.
  • Critical: Food - Potentially Hazardous Food - Hot Holding*
    Observation: Cheese sauce in the hot holding unit was observed hot holding at improper temperatures.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria.

Non-critical violations must be corrected within 30 days.
All food from 3 door RIF was relocated to chest freezers, maintenance call was placed to get unit repaired.
FDA B-1 form handed to PIC.
Thermometers must be placed in every refrigeration and hot holding unit so employees can monitor cold and hot holding temperatures.
Menu items: precooked chicken tenders, hot dogs, hamburgers, pretzels, nacho and cheese, chili for hot dogs, ice cream, soda.
Food thermometer is available.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a @SANITIZING AGENT@ test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Reach-in freezer(3 door) was observed in a state of disrepair and damaged.
    Correction: Repair the reach-in freezer, adjust it to 20 F or less to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Indoor Areas - Surface Characteristics
    Observation: A hole in the ceiling in the kitchen area around lighting fixture.
    Correction: Refinish or replace the indoor ceiling at the area designated so it is: 1. smooth, durable and easily cleanable 2. nonabsorbent
  • Pests - Controlling Pests*
    Observation: Harborage conditions exist. Mice droppings observed in the kitchen and front serving area.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
