Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. Wash Temperature was 112 degrees F. (Data Plate specifies 120 deg.), Rinse Temperature was 110 degrees F. (Data Plate specifies 120 deg.)
Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.

Performed a follow up inspection after receiving a call from PIC that the dishmachine was repaired. Tested the dishmachine and found it to be dispensing sanitizer at the proper concentration. No violation noted during this evaluation. | 01/03/2013 | Follow-up | |
PIC called to say that Ecolab technician had repaired the dishmachine and tested the concentration of sanitizer during the sanitizing step. Concentration tested at recommended level. EHS is marking the violation as corrected and will follow up with a visit to verify the machine is operating properly.

Observation: Dishmachine dispensing unit not working and Chlorine sanitizing solution used was not at an acceptable concentration (0 ppm).
Correction: PIC called repair technician and was scheduled for 2:30 pm arrival. PIC to call EHS to report on the status of the repair. Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

Observation: Facility was using the warewashing equipment but no sanitizing agent was being dispensed during the sanitizing step. All of the dishes and untensils cleaned had not been properly sanitized.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.
