Observation: The food prep operator drinking from an uncovered container in the food preparation area.
Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

Observation: Raw Chicken, Smoked Sausage, Sliced Ham cold holding at improper temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

Observation: Undercounter unit is not sufficient in number or capacity to meet the food storage demands of the establishment.
Correction: Repair or replace unit as necessary to maintain food items at 41 degrees F. or less. Overstocked equipment does not allow for proper air circulation and/or heat transfer. Improper food storage temperatures are a major contributing factor to foodborne illness.

- Food Contact Surfaces - Cleanability*
Observation: The food storage containers in the Walk In Cooler were found to be cracked and chipped. these containers were storing Lettuce, Onions, and Tomatoes.
Correction: Discard and replace cracked and/or chipped food storage containers. Food storage containers shall have a surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent build-up of food debris.
- Equipment - Good Repair and Proper Adjustment
Observation: The Walk In Freezer and Low Refrigeration unit were found in a state of disrepair causing condensation drips on food products stored in each. Product was covered and no contamination was found.
Correction: Repair or replace the Walk In Freezer and Low Refrigeration unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.
- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Ceiling tiles, fans and air vents were found to have heavy build up of grease, dust in the deep fryer area and are in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
