A new pizza MUT cooler arrived on 3/4/14 and is maintaining all product below 41 F.
The light and light shielding in the WIC has not been fixed yet, but per corporate it should be addressed in the coming weeks. Per staff, there are electrical issues involved and it's not simply a matter of installing a stronger bulb and putting a new cover around it.

    Observation: Less than 10 foot candles of light was noted in the WIC
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

Two of the meat toppings in question (ie. mixed, groundbeef) were pulled from the freezer this morning and put in the make-up table cooler. Italian meat still running elevated.
Light shielding in WIC and light intensity still have not been addressed.

Violations from 1/31 and 2/10/14 still stand.
Spoke with area manager (Darius) who says there is discussion about replacing the MUT cooler, but no final decision has been made. Repair technicians will get the temperatures of product under 41 F today by lowering the thermostat as needed. A permanent solution is still to be determined.
Light shielding on the light in the WIC also needs to be replaced (broken).

    Observation: Pizza MUT cooler was observed in a state of disrepair and damaged. Staff are turning the unit on and off throughout the day b/c it is freezing toppings. When off, the unit is warming up unevenly, with toppings being held in the temperature danger zone.
    Correction: Repair the pizza MUT cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the pizza MUT cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Have the MUT cooler repaired immediately and discontinue the practice of turning it off while trying to cold hold toppings at the same time.

Drinks must have a lid and straw if they are to be consumed in the food preparation area.

The evaporator drain pan in the bottom of the pizza MUT cooler has been leaking and so product is not being stocked in one bottom section of the unit. A work order has already been placed to address this.
Staff were asked to remove all chicken wings from the top wells of the pizza MUT cooler and to store them in the bottom or in another source of refrigeration. The nature of the product makes it extremely difficult to properly cold hold the product at 41 F or less in a unit that is consistently opened for use.
It is unclear as to why the pork sausage in the top of the pizza MUT cooler was warmer than all other toppings. Staff stated nothing had been recently stocked/replenished in the unit.
