Transfer certified food managers certificate to Norfolk and post in view of the public. Some pans still have heavy carbon build-up on them. Pans are being soaked in a carbon removing solution. All pans to be done within a week. Recommended for annual Health Department permit renewal.

    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: healvy carbon build-up on some pans.
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Hot water faucet handle in poor repair at the hand basin near the walk-in refrigerator.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Spoke to the area manager and he stated that he would be at the establishment today to proctor the CFM's test for the store manager. Transfer certificates to Norfolk and post in view of the public.

    Observation: The person in charge failed to obtain a valid certified food managers card. The person in charge failed to employ a certified food service manager.
    Correction: Obtain a valid food service managers card.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration. Tested at 0ppm Cl.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 25 parts per million when the pH is at 10 or less and the water temperature is at 120°F.
  • Warewashing Equipment, Cleaning Agents (corrected on site)
    Observation: Detergent or cleaning agent was not present in the water of the wash compartment while in use for mechanical warewashing.
    Correction: In accordance with the manufacturer's label instructions, apply detergent or cleaning agent to wash water for effective cleansing of equipment and utensils prior to rinsing and sanitization.
