PRE-OPENING INSPECTION REPORT: - Hand sink at dish area observed with splashboard to protect clean and sanitized dishes. - Ensure that all walk-ins and cold-holding units have properly working thermometers located in the warmest part of the unit, typically near the front. - Ensure that all hand washing stations have "Employees Must Wash Hands" sign. - Observed overhead fan near exit door in proper working order. - All equipment must be properly cleaned and sanitized prior to food storage and/or food preparation. - Ensure that proper chemical sanitizer is in place along with testing strips prior to food service. - Once cleaned and sanitized, remove ice from ice machine and produce a second batch of ice for food service. - All lights observed shielded and/or shatter proof. - Ensure that prep table with garbage disposal is operated as only a food prep table or only a washing / rinsing / disposal table as to prevent any possible cross-contamination. Do not operate both procedures at the same time during operation. - Chopper is in need of a new blade. Per PIC a new blade will be ordered prior to opening. - Hood will be tested tomorrow, 8/27/14. Lights over hood were observed in proper working order. - Hot water observed at facility during inspection. - Soap and hand towels are needed at all hand washing stations prior to food service. - No chemical sanitizers present during inspection. Ware washing machine is of chemical sanitization only. - Obtain food thermometers prior to food service. - Temperature logs performed twice daily on all walk-in units and three times daily for food from freezer ---->cooking------>serving. - Take temperature of all walk-ins prior to food being stored in units. - Trash area observed clean with doors in closed position. - Temporary CO obtained from City of Suffolk. - Ensure that all food staff have current Food Handler's card per City of Suffolk Ordinance. - Permit issued.
