Inspected during dinner hours. All food items are precooked. No under cooking of any food product per PIC. Handwashing and hair restraints observed. Personnel answered all employee health and food temperature question as required. Thermometers present in all units. Per PIC deliveries are observed, no additives are utilized. Bathroom vents are in place and handwashing were all stocked as required with signage.
  • Person in Charge
    Observation: Employees are not properly trained in food safety as it relates to their assigned duties. A couple of servers do not have food handler card as required by city ordinance. Personnel have 2 weeks to have food handler cards current.
    Correction: Train all employees in food safety as it relates to their assigned duties.
  • Outer Openings - Protected
    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents.Screen at back door observed with screen falling out. Repair door right away to prevent pest and rodents from entering facility.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

Operator is removing windows in bathroom and placing ventilation in area. Ceiling repaired in dining area. All posting / signs have been placed. Vent screen in kitchen ceiling has been replaced. New menu submitted. Food thermometers available and EHS showed operator how to calibrate them. Mops hung properly. Operator needs to caulk around equipment, 3 compartment sink and various area where gaps are visible (EHS showed all areas needed caulking). Back door has gaps around it which operator must close off gaps (weather stripping). Gasp around pipes and wires must be closed. Kitchen walls in some areas are of porous block-operator is placing a smooth surface over time to all the walls in kitchen. Permitted with the mentioned stipulations must be completed. Facility not actually opening for a couple more weeks to finish mentioned items.

    Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food.

    Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees. Hand washing sink at bar is without proper signage.
