| Notes: 1. The thermostat of the TA RIC was lowered while the inspector was present. The chicken salad that had been made that morning was slightly elevated at 42-43 F. Make sure the temperatures of all Temperature Control for Safety (TCS) foods are maintained at 41 F or less. 2. Quizzed employee on employee health. Policy is posted on the kitchen bulletin board. Suggest having employees sign copies of FDA form 1-B and keep them on file. Emailing form to the owner. 3. Chlorine test kit and bleach was available for sanitizing. Per the employee on duty, the owner washes all of the dishes twice a day and no one else. Suggest training other staff on proper dish washing methods. 4. Store all single-service utensils with the lip surface facing downward. One cup of spoons noted stored incorrectly. 5. Clean the ice machine at a frequency necessary to prevent mold build-ups. Suggest wringing out a wiping cloth wet with sanitizer and wiping down the interior areas of the machine not touching ice as an interim cleaning measure.
