| Facility is in the process of getting someone on staff ServSafe certified. Discussed the prohibition of preparing/cooking any foods at home and bringing them into the establishment. A heating element needs to be purchased for boiling eggs on site, or purchase already boiled from a food supply company if the menu item is to be offered. Do not store the half and half down in the cold wells. Keep it in a refrigerator for safer cold holding.

| Adequate thermometer, 3-vat sink setup, steramine sanitizer, and test kit. Reviewed employee health. The inspector lowered the thermostat on the left Frigidaire RIC from a setting of 3 to 5. Milk that had been stored in the unit for over 24 hours was measured at 41.7 F and all product temperature must be maintained under 41 F. Checked the calibration of the facility's metal stem food thermometer. The red one was correct, and the one stored in the Frigidaire RIC was off by a few degrees. Staff is to check the air temperature of the refrigerator after one hour to determine if the thermostat adjustment was enough. Aim for an air temperature of 35-37 F. If not, lower it some more. Reviewed the prohibition of bare hand contact with ready-to-eat foods. Employees cut bananas, and apples for use in smoothies. Gloves MUST be worn when doing this. Hands must be washed before gloving if money was handled prior to food/drink preparation.
