Outside surface (door) of prep cooler. 2. inside surface of pizza prep unit. 3. outer surface of "stool" in kitchen 4. condensation pipe in walk in and condensation catch bucket 5. meat slicer
Correction: Clean these items today and maintain nonfood-contact surfaces of equipment clean.

Observation: Floors of walk in cooler are not smooth and easily cleanable. Wall behind prep table is not smooth and easily cleanable. Seal floor/wall to render smooth and easily cleanable.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Correct within 90 days.

Observation: Floors and walls of kitchen area noted in need of cleaning- next to pizza prep unit, next to walk in, behind prep table, and floors under equipment.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
