The purpose of this visit was to conduct a routine inspection. NOTE: - The operator will send a picture of CFM ID at the end of business hour today. - Provide a service receipt for the refrigerator to the Health Department with in 7 days.
Equipment / Good Repair / Operation Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Traulsen 1DR Undercounter refrigerator at front service area (45/44)
Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. Reset the thermostat or service the refrigerator. Send a copy of service receipt to the Health Department with in 7 days. The food items in the cooler were cooling at the time (2HR) and reloacted to the unit that holds 41F or below.
Plumbing / Maintained in Good Repair Observation: Plumbing connections at the mop sink piping are leaking. the 3-vat sink (Sanitizer basin) is not able to hold water.
Correction: A plumbing system shall be maintained in good repair. Repair the leak and send a copy of service receipt to the Health department with in 30 days.
Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids (corrected on site) Observation: Outside refuse container was uncovered.
Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment. Discussed with the PIC.

Routine
The purpose of this visit was to conduct a routine risk evaluation. Quaternary ammonium sanitizer in 3 vat sink: 400 ppm.
Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Lowfat/soy/nonfat milk in carafes at coffee self service counter: 47/50/51 degrees F..
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. NOTE: PIC disposed of out of temperature milk. Carafes with milk at self serve counter are changed on a routine schedule per PIC. Discussed potential solutions with PIC, including increasing the frequency of carafe replacement.
