PIC has altered cooling process to conform with previous suggestions. Cooling dishes are now separated into shallow containers and placed in an ice bath. After a period of time, the containers are then placed into the freezer for rapid cooling.
No violation noted during this evaluation.

Spoke with PIC about Employee Health Policy. Policy is now posted at employee time clock. Please finish adding consumer advisory to remaining menus.
All cooked foods must be cooled from 135 to 71 within 2 hours and from 135 to 41 in a total of 6 hours. For reheating, previously cooked foods must be cooked to 165.
Facility looks great! Kitchen staff is very eager to learn!

    Observation: Employees are not aware of or are not practicing proper methods to rapidly cool potentially hazardous food (PHF).
    Correction: Ensure employees are using proper methods to rapidly cool PHF that are not held hot or are not for consumption within 4 hours, through daily oversight of the employees' routine monitoring of food temperatures during cooling.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Employees observed handling ready-to-eat (RTE) food with their bare hands. Kitchen staff observed handling bread/toast with bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Critical: Cooling* (corrected on site)
    Observation: Meat loaf/pinto beans/noodles noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the Magic Chef refrigerator.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the make station are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Spoke with PIC about purchasing bleach test kits for testing sanitizing buckets. Spoke with PIC about proper way to store foods (highest cook temps on bottom going up). Discussed proper reheating and hot holding procedures. Household pest chemicals have been removed.

    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Observation: The chicken breast was not reheated to a sufficient temperature and time to eliminate pathogenic bacteria.
    Correction: Rapidly reheat food for hot holding to 165°F or above within 2 hours. Use hot box to hold foods at 135

    Observation: Meat balls hot holding at improper temperatures.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria. Use hot box to hot hold foods at 135 or above. Do not use it to reheat foods.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a BLEACH test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

PIC adjusted the temperature on the cooler. If there continues to be an issue with maintaining proper cold holding temperatures, have a repairman look at the unit. Spoke with employees about employee health. Health Dept,. provided a document on employee health for posting in the facility.

    Observation: A food employee was observed cleaning their hands in a food preparation sink or a sink used for utensil washing.
    Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
