Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Observation: Several fruit flies were noted throughout the facility.
Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

Observation: Wiping cloths improperly stored between use. Observed wet wiping cloths stored on work tables between uses.
Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: vegetable slicer and can opener blade.

Correction: Store detergents, sanitizers, related cleaning or drying agents and caustics, acids, polishes and other chemicals separately from insecticides and rodenticides.

Discussed with the Person in Charge: 1. Blade on rotating slicer is scheduled to be replaced today. 2. Ensure the labeling on the soap dispenser at the cook line hand sink is corrected. The label indicates a hand sanitizer is in the dispenser, when in fact soap is provided. Overall, facility appears clean and well maintained. Thank you!

Observation: Improper handwashing procedures observed. Observed employee wash hands for approximately 10 seconds.
Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.

Observation: Observed several dented cans of pizza sauce on the rack beside the 3 compartment sink. PIC removed dented cans and placed elsewhere to return.
Correction: Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants.

Observation: Observed several plastic food containers that were found stacked while wet after cleaning and chemical sanitization.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
