  • Physical Facilities in Good Repair (repeated violation)
    Observation: Several floor tiles throughout the facility (vinyl and ceramic) are noted to be chipped or peeling or otherwise in poor repair.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
  • Pests - Controlling Pests*
    Observation: Several fruit flies were noted throughout the facility.
    Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

1. Ensure insecticide is used only outdoors. Interior pest control must be performed by a licensed pest control operator.
2. Observed excellent hand washing procedures prior to engaging in food preparation today. Thank you!
3. Overall, facility in clean condition during today's inspection.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use. Observed wet wiping cloths stored on work tables between uses.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: vegetable slicer and can opener blade.
    Correction: Clean and sanitize these surfaces for food contact.
  • Physical Facilities in Good Repair
    Observation: Several floor tiles (vinyl and ceramic) throughout the facility are chipped or cracked.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Critical: Toxics - Storage of Toxic Containers* (corrected on site)
    Observation: Containers of cleaning chemicals not stored separately from insecticides or rodenticides. Observed a can of ant, spider and roach spray on a shelf intermingled with cleaning products. PIC re-located insecticide to employee restroom area.
    Correction: Store detergents, sanitizers, related cleaning or drying agents and caustics, acids, polishes and other chemicals separately from insecticides and rodenticides.

1. Blade on rotating slicer is scheduled to be replaced today.
2. Ensure the labeling on the soap dispenser at the cook line hand sink is corrected. The label indicates a hand sanitizer is in the dispenser, when in fact soap is provided.
Overall, facility appears clean and well maintained. Thank you!
  • Critical: Hands and Arms Cleaning Procedure* (corrected on site)
    Observation: Improper handwashing procedures observed. Observed employee wash hands for approximately 10 seconds.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.

    Observation: Observed several dented cans of pizza sauce on the rack beside the 3 compartment sink. PIC removed dented cans and placed elsewhere to return.
    Correction: Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants.
  • Equipment and Utensils, Air-Drying Required (corrected on site)
    Observation: Observed several plastic food containers that were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
