The purpose of this visit is to conduct a risk factor assessment. There were no critical violations observed. Employee health policy in place. Sanitizer observed within acceptable limits. Temperatures measured today within acceptable limits. EHS provided information to the certified food manager on where to obtain the Northern Virginia Certified Food Manager card. Once obtained email a picture to me at the health department. I have provided you with my business card, which contains my email information. Thank you.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be emailed to the EHS. Failure to provide a copy of the photo identification card may result in further enforcement action.

The purpose of this visit was to perform a routine inspection. Employee Health Policy in place. Supplier invoices approved. Sanitizer in dishmachine, the sanitize basin at the three vat sink and wiping cloth bucket solution measured at an acceptable level. Temperatures measured within acceptable levels. Manager told EHS that the facility may undergo a renovation at some time in the future. EHS referred the manager to the Technical Review and Information Resources office (plan review) to submit for plan approval for the renovation, prior to the start of any renovation.
EHS provided information on Active Managerial Control to the manager.

    Observation: Observed that hand soap was not provided at each handwashing sink: sink at prep area/back row.
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands. Employee went and purchased handsoap.

    Observation: When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the dishmachine with a concentration of 0 ppm total chlorine. No chlorine sanitizer solution.
    Correction: A chlorine-based sanitizing solution shall have a minimum concentration of at least 50 to100 ppm total chlorine when tested using the appropriate test kit. 3 compartment sink was setup.
  • Equip/Utensils/Linens/Single-Service/Invert, Cover
    Observation: Clean plastic wares were observed stored with the food-contact surface facing upward at bagel station.
    Correction: Clean equipment and utensils shall be stored in a self-draining position that allows air drying and covered/inverted.
