The purpose of this visit is to conduct a routine inspection. Employee Health policy in place. EHS provided additional forms for use by the manager today. Sanitizer observed within acceptable limits. Please provide separate scoops for each different type of raw meat (e. g. raw, thin sliced marinated beef and raw shrimp). IMPORTANT: During the beginning of todays inspection a certified food manager was not present. The certified food manager arrived approximately 20 minutes after the beginning of the inspection. This is a repeat violation. One hallmark of Active Managerial Control is that a certified food manager be present to monitor employees to ensure food safety. Active Managerial Control creates a culture of food safety. Because this is a repeat violation, obtain enough additional Certified Food Managers to ensure that a Certified Food Manager is present during all operating hours, including times when employees are prepping food but the facility is not yet open to the public. You have been granted 30 days to provide a the photo identification Norhern Virginia Food Manager card to my email (email on business card provided to you during today's visit). Note: Currently, per the manager, this facility has two Certified Food Managers. A minimum of 1 additional Certified Food Manager is needed. I have provided you with the address and telephone number to ORS Interactive, inc where you can obtain the photo identification Certified Food Manager card. Thank you. The purpose of this visit was to conduct a risk factor inspection. Environmental health specialist observed walk-in freezer is not working properly. Manager was proactive in keeping the unit closed and technicians were called to repair the unit. Manager will notify environmental health specialist by Dec. 8th, 2014 with an invoice for the repair or an update about the unit.
