| Adequate thermometer, 3-vat setup, quaternary ammonia, and test kit. Reviewed employee health. Avoid stacking dishes while they are still wet. This promotes microbial growth. The garlic kept on the cook line cart comes in processed and is mixed with water (not oil). Unopened containers are stored under refrigeration in the WIC. The facility has a rice warmer that is left on overnight. Rice kept overnight in this unit is used for making fried rice. No product is cooled down and later reheated.
