    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: The sanitizer was not dispensing from the dish machine. The person in charge observed that the sanitizer container was empty. The container was changed. Observed the cook take thermometer out of container and place it in the gravy without cleaning it first.
