The hot water heater is repaired. The wash temperature is 160 degrees F and the rinse is 186 degrees F. The pressure gauge is reading 18 during the final rinse. Thank you very much for the quick response.

    Observation: The water source and system serving this food service establishment has been interrupted. Facility magement scheduled a hot water leak repair during food preparation so that the cafeteria kitchen had no hot water. At time of arrival, the kitchen manager was heating water to set up a temporary hand wash station as well as setting up the 3 compartment sink to wash dishes until they can use the high temperature dish machine
    Correction: After speaking with the EH manager, it was determined that they can continue operating since the hot water system repair should be done by the afternoon and steps have been taken to have access to hot water for handwashing and cleaning utensils and equipment. Should the repair take longer than today, the situation will be re-evaluated.
