    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

Operator has done some cleaning - one side of the wok has been cleaned, shelves by prep unit have been cleaned, one wooded work table has been cleaned and repainted. The shelving units in walk-in unit have been cleaned and repainted.

The prep unit by the fryers has been repaired: 40 degrees F. Will get the service order write up for the unit for documentation. The mechanical dishmachine has been repaired and is sanitizing at 100 PPM.

The entire kitchen is in need of a thorough and deep cleaning as well as having an ongoing cleaning schedule in place.
