The purpose of this visit was to conduct a routine inspection. At the time of the inspection, the staffs were prepping food for lunch. There were no food items set on the serving line.
NOTE:
- Provide service receipt for Beverage-Air 3-DR upright refrigerator with in 7 days.
  • Equipment / Good Repair / Operation
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Beverage-Air 3-DR upright refrigerator near serving line #5 (45F).
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. Service the refrigerator and provide a service receipt to the Health Department with in 7 days.

    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: 3 Containers of rice in the Hobart walk-in cooler at 57F/57F/59F
    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. Food items were discarded by the person-in-charge.

Teh purpsoe of this visit was to conduct a routine inspection. Quaternary ammonium sanitizer in 3 vat sink/ wiping cloth bucket: 4000/300 ppm.
  • Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site)
    Observation: The following food item(s) were found hot holding at improper temperatures using a calibrated food temperature measuring device: cheese pizza/ pepperoni pizza/ cheeseburger in FWE hot hold cabinet near SL#1: 123/119/121 degrees F
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19.
  • Equipment / Good Repair / Operation
    Observation: FWE Hot hold cabinet near SL#1 unable to maintain hot food at 135 degrees F or above.
    Correction: Hot hold cabinet to be taken out of service until it can be restored to fully funcitonal condition. NOTE: PIC created work order for the cabinet during the inspection.

The purpose of this visit was to conduct a risk factor evaluation. Quartenary ammonium sanitizer in 3 vat/wiping cloth bucket (250/200 ppm). PIC advised Bev Air 1 glass dr display cooler had been serviced on Friday, and temperatue setting may have been changed at that time. PIC adjusted temperature setting, and reduced ambient temperature to 34 degrees F in approximately 1/2 hour.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Sliced tomatoes/sliced cheese on serving line #1
    Correction: Individual yogurt/string cheese/sliced cheese in Bev Air1 glass door display cooler near SL #2. NOTE: PIC relocated food items from serving line #1, and items from glass dr display cooler (food items determineed to be out of temperature for minimal time that would allow cooling to <41 degrees F and total time out of temperature time < 4 hours) to alternative cooler. All other food items were disposed.

3 compartment sink is used as a means to sanitize dishware.
  • Handwashing / Where to Wash (corrected on site)
    Observation: A food employee was observed cleaning their hands in a food preparation sink or in a mop sink.
    Correction: ALL food employees shall wash their hands in ONLY a designated handsink.
  • Temp Meas Devices for Cold & Hot Hold Equipment, Present (corrected on site)
    Observation: There was no temperature measuring device located in the following cold or hot holding equipment: in Norlake walk in cooler.
    Correction: Cold or hot holding equipment used for the storage of potentially hazardous foods (time/temperature control for safety food) shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display. CERTIFIED FOOD MANAGER CALLED FOR REPAIR ON WALK IN COOLER THERMOMETER AND PLACED A THERMOMETER IN COOLER.
