Facility served pre-K student (HSP). Cooks chicken from the raw state and has stated that they will not be serving shelled eggs. Ensure mops are stored with mop heads facing down (hanging) to prevent contamination of handles. Dishwasher in facility is not being utilized due to low manpower issues.

Facility was inspected preparing for breakfast. Person in charge was very knowledgeable about temperatures and the two step cooling process. Food workers were very proactive in correcting all discrepancies.

Observation: Employees are not properly trained in food safety as it relates to their assigned duties. A Few food workers do not have valid food handler cards.
Correction: Train all employees in food safety as it relates to their assigned duties. Food handler cards must be obtained with in 30 days of this inspection date.

Observation: Food packages are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants (ex: dented food cans)
Correction: Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants. Items removed from dry storage to be returned from vender.

Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings.

Observation: The ready-to-eat (RTE) commercially processed turkey in the walk iin refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
- Equipment - Good Repair and Proper Adjustment
Observation: Hobart dishmachine was observed in a state of disrepair. Dishmachine is not working and facility is waiting on a part.
Correction: Repair the diswasher to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the dishwasher, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
- Equipment - Cutting Surfaces
Observation: The cutting board(s) along the prep area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
