    Correction: Discard gloves when changing tasks and wash hands when changing from raw food to ready-to-eat (RTE) food preparation to prevent cross contamination. Single-use gloves shall be used for only one task such as working with RTE food or with raw animal food and used for no other purpose.

    Observation: Mussels were held at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Correction: Ensure employee beverages have a lid and straw and are handled so as not to contaminate exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles, or other items needing protection.

    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination: raw chicken stored over mussels in the walk-in cooler.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Observation: Several foods in top of the pizza prep cooler were at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site) (repeated violation)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: containers and dishes in dish machine.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Manually wash, rinse and sanitize dishes and utensils until the dish machine is properly sanitizing. Spoke with manager on 2/12/13 and confirmed that dish machine has been repaired and sanitizer concentration on dishes was measured at 75 ppm.
  • Critical: Toxics - Storage of Toxic Containers* (corrected on site)
    Observation: Containers of fly spray are stored right next to open coffee filters on a shelf.
    Correction: Toxic chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items. PIC voluntarily discarded cans of fly spray and the possibly contaminated coffee filters.
  • Toxics - Presence and Use Restriction (corrected on site)
    Observation: Unnecessary poisonous or toxic materials found in the food establishment: 3 cans of fly spray.
    Correction: Remove unnecessary pesticides. Pesticides may only be applied by certified pesticide applicators in food establishments.
