(b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

Observation: The food-contact surfaces of the following equipment were not observed sanitized: containers and dishes in dish machine.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Manually wash, rinse and sanitize dishes and utensils until the dish machine is properly sanitizing. Spoke with manager on 2/12/13 and confirmed that dish machine has been repaired and sanitizer concentration on dishes was measured at 75 ppm.

Observation: Containers of fly spray are stored right next to open coffee filters on a shelf.
Correction: Toxic chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items. PIC voluntarily discarded cans of fly spray and the possibly contaminated coffee filters.
