Proper glove use and hand washing observed. There are two McCall fridges in the middle of the kitchen that are not in use, PIC is awaiting removal of units. PIC going to monitor small unit to ensure it is holding proper temperature. Recommended for permit renewal. Permit issued.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Middle True cooler was observed in a state of disrepair. Unit holding at about 50°F. Unit is stocked before each lunch and emptied at the end of service. Unit was cold holding properly this morning when temperature logs were filled out. PIC will monitor unit and if it is not holding proper temperature in the morning, then a work order will be put in.
    Correction: Repair the True cooler to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the True cooler, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of food residue, and/or other debris: deflector plate in ice machine.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

Spoke with CFM and employee who takes temp logs for walk-in freezer about properly reading thermometer. Delfield reach-in holding high but no PHF's stored in there, instructed CFM to monitor. Kitchen neat and well organized. Temperature logs maintained.
