Display case is clean and well maintained. Chocolates have a shelf life of 6 months per shipment packaging. Gloves are used to remove chocolates to store in display case. Employees are currently utilizing department store restroom facilities to wash hands before glove use. Application provided. Instructed manager to notify Health Department once sink repairs have occurred.
- Equipment - Good Repair and Proper Adjustment
Observation: The handsink located next to the refrigerator in the back room was observed in a state of disrepair and damaged. Observed severe corrosion preventing proper drainage and overall use.
Correction: Repair the handsink to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the handsink, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
- Handwashing Lavatory, Water Temperature, and Flow
Observation: Water from the handwashing sink beside the back room refrigerator was measured at a temperature less than 100°F. Observed temperatures between 88-92 degrees.
Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.
