kitchen is clean and organized. The kitchen is very hot and the temperatures are going up on the refrigeration equipment. Thermometer on the 2 door reach in reads 49 and the food in the back reach in is just 41 although the thermometer is reading 36. The manager has been monitoring temperatures this morning. Continue to monitor refrigeration temperatures and remove food if necessary.

Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

Observation: The backflow or backsiphonage prevention device installed on the janitor closet hose is not identified as meeting standards set by the American Society of Sanitary Engineering.
