Discussed the following with the PIC: 1. Inspecting the produce products for spoilage and discarding the spoiled product. 2. The AC leaked and was repaired, the ceiling tile was awaiting installation dependent on the verification that the AC unit's repair was good. 3. The cleaning of the igloo coolers.

Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a appropriate test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: No sanitizing step was observed when washing and rinsing the dishes. The PIC set-up the sanitizing compartment in the sink which tested at an acceptable level.
Correction: Adjust the chlorine sanitizing solution to a level of at least 100 parts per million when the pH is at 10 or less and the water temperature is 55°F.

Observation: The commercially processed ready-to-eat (RTE) foods in the refrigeration unit was not labeled with a ""consume by"" date.
Correction: Discard the food at this time. Ensure that all commercially processed RTE foods are mark a "consume by" date once opened. If the food is held at 41°F or below the food shall be served, sold or discarded within 7 calendar days or within 4 calendar days if held at 45°F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Observation: Animal food such as eggs, was served or sold undercooked, or without otherwise being processed to eliminate pathogens, in Ready-To-Eat form.
Correction: The Permit Holder shall inform Consumers of the significantly increased Risk of consuming such Foods by way of a Disclosure and Reminder using brochures, deli case or menu advisories, label statements, table tents, placards, or other effective written means.

Observation: The ambient air temperature measuring device (degrees F) located in the reach-in refrigerator was broken.
Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
