  • Sanitizing Solutions, Testing Devices (repeated violation)
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Class K Fire extinguisher was observed in a condition that prevents necessary maintenance and easy cleaning.
    Correction: Have Fire Extinguisher serviced to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Pests - Controlling Pests*
    Observation: Premises are not being routinely inspected for evidence of pests(multiple flies and ants observed)
    Correction: Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.

All other foods in facility were frozen. Discussed consumer advisory for eggs and provided wording if eggs will be offered undercooked, locking out door chest freezers, handwashing and glove use and cleaning and sanitizing equipment. Menu includes hamburgers/cheeseburgers, hot dogs, French fries, bottled beverages. PIC wants to expand the menu to include breakfast sandwiches with egg, cheese, bacon and sausage

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a test kit for an approved chlorine sanitizer so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level. EHSS provided some test paper and discussed measuring chlorine concentration until a test kit can be obtained.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the following equipment has accumulations of grime and debris: gaskets on out door chest freezers and hood filters with grease buildup.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chemical observed in facility for use as sanitizer on food contact surfaces does not meet the requirements of 40 CFR 180.940. Observed Chlorox cleanup available for use as a sanitizer. Information on the container did not indicate that it was for use on food contact surfaces.
    Correction: Utilize only a sanitizer that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces. Recommend non-splashless, non-scented bleach with 5.25% sodium hypochlorite
08/04/2014Routine
This is a volunteer run concession stand. Menu includes hamburgers, cheeseburgers, hot dogs and fries. Food service from 6 - 7:30 p.m. on nights of operation. Food picked up from Sam's Club. Discussed keeping food cold at 41 degrees or below or frozen during transport. Hamburgers and fries are cooked from frozen stated on outside grill and hot held. No food is held over. Discussed cleaning and sanitizing process in 3 basin sink. Chlorine is used as a sanitizer and test strips are available. Discussed wearing hair restraints, reusing aluminum pans, cooking temperatures, holding temperatures, hand washing, glove use and employee health.
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
    Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the grill backsplash has accumulations of grease.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
