According to the manager a part is on order for the preparation unit that was observed cold holding at a temperature >41 F. Do not store TCS food product in the unit, until it has been repaired to properly cold hold at 41 F or below. Plumbing connections under the 3-compartment sink observed leaking. Ceiling tiles/vents in the kitchen observed in need of cleaning. The lid to the bulk sugar container needs replacing. Some fruit flies observed in the dishmachine area. Reseal the caulking to the handsink near the walk-in refrigerator. Chlorine sanitizer in the dishmachine checked for proper concentration using the provided test strips. Utilize an ice bath and shallow containers when cooling bulk products (ex. curry). A recheck will be conducted for the refrigeration unit.
