Observation: Food is subject to environmental sources of contamination during preparation. Food subject to contamination when being dispensed with measuring bowls without handles. Use handled dispensing containers for breading and vinager.
Correction: Protect unpackaged food from environmental sources of contamination during preparation.
- Self-Service - Consumer Self-Service Operations
Observation: Buffet or salad bar is not being monitored effectively by a food employee trained in safe operating procedures. Handles of tongs on raw meats at Mongolian grill.
Correction: Buffet or salad bar must be monitored by a a food employee trained in safe operating procedures. Food employee must monitor the bar and replace the tongs when hands come in contact with the frozen raw meats.

Observation: The prepared ready-to-eat (RTE) battered chicken and shrimp in the refrigeration unit is not properly dated for disposition.
Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Vector complaint filed this morning. Inspection of facility based on complaint only. Entire facility inspection was not performed. Exterminator inspection must be performed within the next 10 days. Provide Health dept. with a copy of inspection when completed. No vectors or evidence was observed during inspection.
- Refuse - Storing Refuse, Recyclables, and Returnables
Observation: The recycables must be free of organics prior to outside storage.
Correction: Waste handling containers are to be insect and rodent proof.. Clean all metal cans and plastic buckets prior to storage outside. Do not allow recyclables to become a vector attractent. Begin correction immediately.

Retail cooler 38F coke cooler in kitchen 36 Went over Healthy food handler with PIC.
- Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination.
Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.
- Food Storage Containers - Identified with Common Name of Food (corrected on site)
Observation: Unlabeled food containers. Spice at Sushi counter not labeled.
Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.

Observation: The food on display is not protected from contamination. Add a top to the sneeze guard.
Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination. Correct in one week.
- Wood, Use Limitation
Observation: A wooden top table is not designed to be easy cleanable.
Correction: Sand and seal the wooden top table in Main Kitchen. Correct in 1 week.

#1 Re- surface the wooden barkers table in Main Kitchen. This table cannot be used for orgainics. #2 Additional drain board space is needed for air drying of clean utensils etc. Before final inspection install all of the utensils, pots pans and clean everything. Mongolian Kithchen. #1 Provdie the Radford City Building Dept. approval letter for code compliance to the Health Dept. #2 Correct the venting problem in kitchen. Provide all small wares, and equipment and wash -rinse and sanitize, clean the entire facility. After completing the above and pay the permit fee an annual permit will be issued.
