Critical: Demonstration of Knowledge* Observation: The person in charge failed at being a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program or responds correctly to the EHS's questions as they relate to the specific food operation.
Correction: Ensure that the person in charge has a valid certified food protection manager certificate and/or correctly demonstrates knowledge of the food operation as it relates to the EHS's questions.
Temperature - Food Temperature Measuring Devices - Provided Observation: The food Handler/Manager could not provide a food temperature measuring device.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.(0-220*F calibrated metal stem thermometer).
Mops - Drying Mops Observation: Mops and brooms not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Food Storage - Clean and Dry Location Observation: Food stored in a commonly wet or soiled location.
Correction: Protect food from contamination by storing the food in a clean and dry location. Install a splash guard next to handsink, if this table/area is used for food prep/distrubition or storing..(Area next to handsink)
Sanitizing Solutions, Testing Devices Observation: There is no test kit (QT) located in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a QT test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Equipment - Fixed Equipment, Elevation or Sealing Observation: Dry Storage Racks (shelving) is particle board, which has been installed on a rack area without sealing. This is a cleaning hazard.
Correction: Alter the installation of the equipment to allow easy cleaning under the equipment. Make of the following corrections. 1. Seal the equipment/shelving withhin the racks.

Routine
Facility will utilize a convection oven and a microwave for food preparation. Changing tables not installed at time of inspection. All other previously noted violations corrected. Facility recommended for permit.
Floors, Walls, and Celings - Cleanability Observation: Ceiling in kitchen area is not smooth and easily cleanable.
Correction: Repair or replace ceiling to make it smooth and easily cleanable.
Toilet Rooms; Enclosed Observation: Toilet room door is not provided with a self-closing door
Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
