Students pack lunches Monday/Tuesday/Wednesday/Thursday and a local VDH Permitted Facility provides pizza every Friday. That is served on single-service utensils. Discussed use of Time As A Public Health Control. On occasion's, church school groups prepare meals in the kitchen - (Note: All food preparation shall be done on site. Food establishment operations are not to be conducted in a private home, this includes canned items, salsa and acidified foods). Discussed the option to contact the local health department to request food safety guidance if needed.
Toilet Rooms - Closing Toilet Room Doors Observation: Toilet room doors are being kept open
Correction: Keep toilet room doors closed except when cleaning or during maintenance operations to prevent insect and rodent entrance and the associated potential for the spread of disease.

Routine
Note: Food service very limited at this time. Most days students bring lunches from home. Discussed with PIC proper food temps and times with regards to cooking, cooling and reheating. Discussed proper date labeling of PHF's (& days at 41* or below.) Discussed proper food sources- Please note that all foods for cafeteria service must be from an approved source. Discussed need for general assesment of utensils and pans for contruction and number required. Offered to provide inservice for food service for other church meals and events.
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) Observation: The prepared ready-to-eat (RTE) hot dogs and hamburgers in the refrigeration unit is not properly dated for disposition.
Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
Temperature - Food Temperature Measuring Devices - Provided Observation: The person in charge could not provide a food temperature measuring device.
Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.
