    Observation: Ventilation covers not easily cleanable, and have a heavy amount of dust accumulated.
    Correction: Attachments to walls and ceilings shall be easily cleanable. Recommend that the maintenance department routinely clean all ventilation covers throughout the facility.

Discussed replacing gaskets on the milk box on the right side of the line, if you are facing the line. Operator to track the temperatures of the unit elevated to 44 during the inspection box was open for breakfast operator stated that temperatures were good this mourning on the unit. No risk factors viewed out of compliance.

    Observation: Wiping cloths improperly stored between use. No sanitizer detected in the wiping cloth buckets.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use. Staff corrected during the inspection.
