The above observations and the following were discussed with the person in charge:
-Monitor the temperature of the infants room reach in cooler. Thermometer measured at 44'F during the inspection and products inside this cooler measured at 45'F-46'F. It was not determined how long the products had been in the cooler. Advised the PIC to monitor the cooler and ensure all products stored in this cooler are measured at 41'F and below.

The above observations and the following were discussed with the person in charge:
-Bleach sanitizer in the infants room measured at 50 ppm. Quatinarry ammonium sanitizer in the 3 compartment sink measured 200 ppm.
-Can opener blade on order.
The person in charge was very knowledgeable regarding food safety and employee health, excellent job!

  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The following areas were noted in need of cleaning: the walls behind the rinse sink and the stove.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

The above observations and the following were discussed with the person in charge:
-Recommend providing an area for employees to keep their foods separate in the reach in cooler in the kitchen.
-Thermometers and calibration.
-Caulking behind the 3 compartment sink and handsink.
-Lights in the hood.
-New handle on order for the reach in freezer.
-Employee health policy.
The quaternary ammonium sanitizer in the 3 compartment sink measured at 200 ppm.
The person in charge was very knowledgeable regarding food safety, temperatures and food handling. Great job!

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the bleach sanitizing solutions.
    Correction: Obtain a bleach sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following utensils were observed soiled to sight and touch: the whisk, tongs and spatula stored in the utensil drawers under the prep table by the handsink. PIC placed all items in the 3 compartment sink to be cleaned during the inspection.
    Correction: Clean and sanitize these surfaces for food contact.
  • Physical Facilities in Good Repair
    Observation: The following areas are not maintained in good repair: 1. observed a gap around the pipe under the 3 compartment sink 2. observed the coving to be missing on the wall under the 3 compartment sink.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: The bleach sanitizer that is being applied to food contact surfaces in the classrooms does not meet the requirements. Sanitizer measured at >200 ppm. The PIC corrected the bleach sanitizer to 100 ppm during the inspection.
    Correction: Utilize only bleach sanitizer that meets the requirements when applying to food contact surfaces.
