Observation: Raw pork, in a plastic package, was being stored above a covered pan of cooked peppers and onions.
Correction: Raw meats (and raw seafood) must always be stored below all precooked, and ready-to-eat, foods. This is true even if the foods will be cooked again prior to service to customers.
- Equipment - Good Repair and Proper Adjustment
Observation: There is a build-up of black mold on the plastic sheeting splash guard, above the three- compartment (dishwashing) sink, in the kitchen.
Correction: This plastic sheeting needs to be scrubbed ad washed, rinsed, and sanitized, or replaced, so that there is no mold in the area. This needs to be taken care of, as soon as possible.
- Light Bulbs Protective Shielding
Observation: There is no protective shielding covering the light bulb fixture in the walk-in refrigerator.
Correction: We require that all lighting be completely shielded in kitchen and food prep areas. Proper shielding needs to be put back in place, associated with the lighting in the walk-in refrigerator. Or, as an alternative, "shatter-proof" safety light bulbs may be used.
- Lighting, Intensity
Observation: Lighting is not working in the walk-in refrigerator.
Correction: We require that the lighting intensity be 10 foot candles, or higher, in all areas of the walk-in refrigerator. This needs to be corrected as soon as possible.

- Equipment - Good Repair and Proper Adjustment
Observation: The hot water handle is not working in the back kitchen handwashing sink. The hot water handle is missing on the mop sink. The cold water handle is not working on the right faucet of the three-compartment (dishwashing) sink. There is duct tape wrapped around the handle of the knife sharpener, on the magnetic strip knife rack. There is a crack in the red plastic tray that is being used for storage of the ice scoop associated with the big ice machine.
Correction: Parts have been ordered to repair the handles which are broken, at the sinks. The repair at the back kitchen handwashing sink, and at the dishwashing sink, need to be completed as soon as possible. The repair at the mopsink also needs to be completed. We do not allow duct tape to be used for repairs-duct tape introduces rough surfaces which are not cleanable, at the bacterial level. The broken knife sharpener was immediately discarded by the establishment management, correcting this part of the violation. The cracked red tray was immediately discarded, and replaced with a smooth, easily cleanable, steel pan-the ice scoop is now being stored in a steel pan, correcting this part of the violation.

- Utensils - In-Use - Between-Use Storage (corrected on site)
Observation: There were single-use plastic cups, with no handles, being used as a substitute for proper scoops or spoons, with a handle, in two pansof red sauces, in the walk-in refrigerator.
Correction: We require that only scoops, or other utensils, with a handle, be used for this application. And the handles must always be up, out of the food product. This violation was immediately corrected by the establishment management.
- Equipment - Good Repair and Proper Adjustment
Observation: The hot handle of the mop sink faucet is broken off.
Correction: We require that all of the handles for hot and cold water, above the sink basins, work correctly at all times.The hot handle at the mopsink needs repair or replacement.
- Plumbing System Maintained in Good Repair
Observation: In the ladies restroom, the wax ring gasket, associated with the base of the toilet, has a small leak.
Correction: This seal problem needs to be taken care of, as soon as possible.
