    Observation: A recent repair to plumbing system components of the ice machine are not in accordance with law.
    Correction: All repairs to plumbing equipment and lines are to be in accordance with law. Properly repair the equipment.

    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.

    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen next to the office.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Unused or non-functioning equipment (tall refrigerator) not removed from the premises.

    Observation: Container of windex are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. (above the bread bun which was wrapped)

    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

    Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.
    Correction: Use a sanitizing chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: dishes washed in the dishmachine without any sanitizer.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

    Observation: The grease for the chicken sandwiches, next to the grill area, has a distinct odor and has a strong black color.
    Correction: Ensure food is safe and unadulterated.Oil for fryers should be replaced at a frequency that keeps oil from burning and causing a potential hazard.
  • Critical: Time as a Public Health Control*
    Observation: Several foods in the sandwich assembly line, for which time rather than temperature is being used as a control, were not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.
  • Warewash Machines, Temperature Measuring Devices
    Observation: The temperature measuring device for the (wash/rinse/sanitizing) tank of the warewashing machine is (not operating).
    Correction: Provide a functioning temperature measuring device at the (wash/rinse/sanitizing) compartment so employees can routinely monitor the water temperature.
  • Cloths - Wiping Cloths, Air-Drying Locations (corrected on site)
    Observation: Wiping cloths that were laundered on site were observed air-drying at the drive thru.
    Correction: Air-drying of cleaned linens must be done in a location that prevents contamination to both the cleaned linens and adjacent food preparation/storage areas. Relocate wiping cloths to allow contamination-free air-drying or enter into a contract with a linen service.
