    Correction: chicken nuggets were cold holding at improper temperatures. ( the operator rapidly cooled the TCS food products)

The operator indicated that a service call has been made concerning the vast temperature readings on the digital display for the sanitizing rinse on the Hobart hi-temperature dishmachine.

    Observation: Water stained ceiling fixture was observed by the cookline and food processing area. The manager stated that a service call is pending concerning the identification of the leak and repair of the ceiling/roof
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: The methods used for cooling were not adequate ( chicken strips prepared today, cooled and then placed on salads measured 45 degrees F, on the serving line).
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
