Copy of food manager and food handler class schedules given to chef. Work order in for repair of three compartment sink leak. Chef called in work order for hand sink. Facility recommended for permit renewal. Food permit, copy of receipt and copy of application issued to executive chef.

    Observation: Door gaskets in disrepair on walk-in cooler #5.
    Correction: Repair or replace the walk-in cooler #5 door gaskets in accordance with the manufacturer's specifications.
  • Lighting, Intensity
    Observation: Lighting in need of checking in walk-in cooler #8.
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms
  • Physical Facilities in Good Repair
    Observation: Floors, walls and ceiling throughout kitchen in need of some repair.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Inspection conducted with Chef Thomas and new manager, Jeffry Thomas. Informed by chef that maintenance to repair some equipment throughout facility. Informed by chef Thomas that a work order in for compartment sink. Some equipment not in use and some equipment to be removed. Pepsi box to be replaced. Haccp books and temperature log book kept in chef office. Logs are maintained and kept current. Copy of food handler and food manager class information given to manager.
  • Critical: Plumbing System Maintained in Good Repair*
    Observation: Metal pan of water stored underneath pipe at three compartment sink due to leak.
    Correction: All repairs to plumbing equipment and lines are to be in accordance with law. Properly repair the equipment.
08/22/2014Routine
Walk-in #5 registered at 36 degrees, Walk-in freezer #6 registered at -10 degrees, Walk-in #7 (fruits & vegetables) registered at 40 and Dairy cooler registered at 35 degrees. Hood systems cleaned by Tidewater Pressure Washing LLC on 11-3-13 and next service date scheduled for 3-3-14. Compartment sink sanitizer registered at 200ppm. Facility recommended for permit. Food permit, copy of receipt and copy of application issued to Chef Christopher Thomas.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gaskets of the small pepsi fridge storing milk and juice, walk-in #3 and walk-in #5 in need of repair.
    Correction: Repair or replace the door gaskets in accordance with the manufacturer's specifications.
  • Lighting, Intensity
    Observation: Observed some light bulbs out under 2nd floor hood systems.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor

  • Equipment - Good Repair and Proper Adjustment
    Observation: Ice buildup observed around window of walk-in freezer door #6.
    Correction: Remove ice buildup and repair the to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
