    Observation: The food-contact surfaces of the slicer blade assembly and several dishes stored as clean on a shelf are not clean to sight and touch.

Several boxes/containers of food product observed stored on the floor in the dry storage area and walk-in cooler units. Employee jacket observed improperly stored on the dry storage shelving. Floor surface under the mixer unit observed in need of cleaning. Ceiling tiles throughout the kitchen observed in need of cleaning. Hood vents in need of cleaning. Live tilapia observed in a bin of water by the 3-compartment sink (an invoice from the supplier was observed). Several lights in the kitchen observed in need of replacing. Dishmachine chlorine sanitizer concentration checked using the provided test strips (50 - 100 ppm). Develop and implement an effective cleaning program.
