- Make sure all staff use some type of hair restraint.
- The Delfield drawer unit was observed cold hold right at 41 degrees. Monitor and adjust down if observed cold holding above 41 degrees.
- Both Walk-ins recovering from the doors being open from a delivery. Check later to ensure both units recovered properly. (With-in the next 2 hours)

Discussed procedure for cooling meats after slicing/portioning. During the cooling process, please keep the foods being cooled uncovered (in a protected location). After foods have cooled to 41°F then, cover the product.
Discussed new hose at the mop sink area.
Discussed new filter for fryers. (during inspection they were out of these new filters)
Facility operates 24 hours a day. Cleaning procedures are in place at regular intervals.

-Please replace light cover in dry storage
-Paper towels on counter close to hand sink, but please repair dispenser.

    Observation: Ice scoop stored in area that may be difficult to keep sanitized.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.
