    Observation: Pizza boxes were found stored on the floor.
    Correction: Store pizza boxes in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.

Adequate thermometer, 3-vat setup, sanitizer water, and test kit. Reviewed employee health.
Timers were put in use on the speed racks of prepped pizzas. Facility is extremely busy and going through product quickly at this point.
Repairs under/around 3-vat sink have been made as cited in 5/13 inspection.

  • Critical: Time as a Public Health Control* (corrected on site) (repeated violation)
    Observation: Pizzas on speed racks for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time. Timers were not in use.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

Adequate thermometer, quaternary ammonia sanitizer, and test kit. Reviewed employee health.
A time chart for pre-made pizzas on one speed rack was marked incorrectly according to management. Another speed rack did not have any sort of marking device for time control. Management stated a timer should be set for those pizzas.
Sealing of gaps/cracks around the 3-vat sink plumbing needs to be corrected within thirty (30) days. These same violations were noted on the 11/8/12 inspection and have NOT been addressed.

  • Floor and Wall Junctures, Coved, and Enclosed or Sealed (repeated violation)
    Observation: Wall juncture around the plumbing connections at the 3-vat sink are not sealed. Hole/gaps visible.
    Correction: Seal floor and wall juncture in rooms where water flush cleaning methods are used.

Quaternary sanitizer concentration tested within the manufactures acceptable range in the 3 compartment sink.
A comprehensive food safety program is in place and being utilized. Keep up the good work.
