Overall the kitchen was maintained clean. Handwashing observed and gloves were being worn.
- Warewashing Machines, Manufacturers' Operating Instructions
Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. The data plate states that the final rinse pressure should be 20 +/- 5 psi and the pressure valve was reading 33 psi (this is a repeat issue).
Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.
- Critical: Handwashing Lavatory*
Observation: There is no functional handwash sink in the employee restroom and employees must exit the restroom and walk across the kitchen to wash their hands.
Correction: A handwash sink shall be located in, or immediately adjacent to, the toilet room. There is an existing fixture in the restroom that does not have a mixing valve and is incapable of providing water temperature of at least 100 degrees F with free flowing water to allow employees to properly wash their hands. This needs to be corrected ASAP (within 10 days). Please fax a completed work order to the Orange County Health Department.
