Note: The handwash sink will be repaired during the summer and until then the employee restroom will not be used (employees will use the restroom down the hall). The floor under the high temperature dishmachine will also be repaired during the summer.

    Observation: The floor under the high temperature dishmachine is not maintained in good repair. There are other sections of the kitchen floor that are also in poor repair. There is a work order for this summer to paint the floor.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Overall the kitchen was maintained clean. Handwashing observed and gloves were being worn.
  • Warewashing Machines, Manufacturers' Operating Instructions
    Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications. The data plate states that the final rinse pressure should be 20 +/- 5 psi and the pressure valve was reading 33 psi (this is a repeat issue).
    Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.
  • Critical: Handwashing Lavatory*
    Observation: There is no functional handwash sink in the employee restroom and employees must exit the restroom and walk across the kitchen to wash their hands.
    Correction: A handwash sink shall be located in, or immediately adjacent to, the toilet room. There is an existing fixture in the restroom that does not have a mixing valve and is incapable of providing water temperature of at least 100 degrees F with free flowing water to allow employees to properly wash their hands. This needs to be corrected ASAP (within 10 days). Please fax a completed work order to the Orange County Health Department.

    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner. correct within one week
