CFM present during inspection and lunch was being served to children during the inspection. Observed good hand washing practices and good use of gloves with ready to eat foods. Dumpster has been replaced with a new one. Facility is clean and organized. Second CFM registered to take class this month. Recommend for permit renewal today.

Facility is maintaining temperature charts and kitchen area was observed to be clean and organized. Spoke with administration about getting a second certified food manager as a back up. Permit expires next month, handed CFM permit renewal form and schedule for 2016 certified food managers class.

    Observation: Outside refuse container was uncovered.
    Correction: Cover all waste containers when not in continuous use.
  • Refuse Receptacles
    Observation: The metal refuse dumpster was corroded and had holes due to rust. Potential for pest harborage.
    Correction: Replace the metal refuse container that is rusting.

Follow up on phone call from certified food manager informing EHS that hood and stove has been professionally cleaned and degreased on 10/7/2015. The facility has also purchased cold holding equipment. Inspected equipment and no violations seen.

CFM present during inspection and Food permit expires 02/29/2016. CFM is very knowledgeable and maintaining temperature logs of cold holding and food. Fridge #1 still having issues with maintaining temperature and CFM says she keeps only whole vegetables and no cut up vegetables or fruits. The school board showed purchase of new refrigeration. Stove is in need of cleaning and degreasing. Spoke with the members of the board who stated that they are in the process of getting another company to clean stove. Recommend cleaning and degreasing the stove as soon as possible in order to prevent a potential fire. Recommended training another employee as a back up CFM. Left my contact information to be contacted as soon as stove is cleaned and degreased.

    Observation: The nonfood-contact surfaces of the following equipment ( Freezer #1 gasket and Stove)were observed soiled with an accumulation of debris and grease

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
