Proper reheating procedures were discussed with the person in charge. Soups that have been cooled after the first day of hot holding and then reheated the next day must be rapidly reheated to 165°F for pathogen destruction.

    Observation: The handwashing facility located in the kitchen is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Adjust the location of the equipment in the kitchen preventing its use. The sink next to the ice machine in the front service area may be designated as a hand sink if desired but may only be used for handwashing thereafter.
