At time of inspection, there was no food in a state of preparation that would allow time/temperature measurements. No violative conditions were observed. The inspection was received by the cafeteria manager.

  • Physical Facilities in Good Repair
    Observation: Paint is coming off the floor in the dry-storage room, especially at the entrance. Paint is chipping on the posts supporting the pot rack. Black vinyl baseboard coming loose between the door to the walk-in cooler and door to the walk-in freezer. Floor and pot-rack posts are not longer "smooth and easily cleanable", and the chipping paint on the pot rack is potential source of contamination of food (foreign matter, i.e., paint flakes).
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities, makes them harder to keep clean.

NOTE: The floor in the dry-storage room, particularly just inside the door (where the foot traffic is greatest), is beginning to show the need to be repainted. It is suggested that this maintenance could be done over the summer when the cafeteria is closed.

Note: Raetone reach-in refrigerator #2 appeared to be not cold-holding properly and food was relocated to the walk-in cooler. Later during the inspection, it was determined that the unit was in defrost mode, not malfunctioning. Daily temperature logs are kept for each hot- and cold-holding unit in this facility.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: An employee was observed handling ready-to-eat (RTE) food (iceberg lettuce) with bare hands.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands. (Without being asked, the employee put gloves on
  • Lighting, Intensity
    Observation: Less than 10 foot candles (or 108 lux) of light was noted in the walk-in freezer. Measured approximately 57 lux at shelves beside the door. Light fixture over the door had no light bulb in it.
    Correction: Provide at least 10 foot candles (108 lux) at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning. The PIC will put in a work order for the light fixture.
