Observation: Frozen food of animal origin (ground beef), in intact, sealed, commercial packaging, stored in freezer above frozen food in intact, sealed, commercial packaging (cookie dough).
Correction: To avoid potential for cross contamination between frozen foods, best practice is to organize freezers according to the regulatory requirements for "fully cooked' temperatures. Put foods of higher cook temperature BELOW foods with lower cook temperatures (for example, ground beef goes below cookie dough).

- Non-Food Contact Surfaces
Observation: The nonfood contact surfaces of the door handles on the reach-in cooler and freezer have accumulations of grime and debris.
Correction: Clean these surfaces as frequently as necessary, to prevent accumulation of soil residues that become encrusted or could attract insects and rodents.
- Wall and Ceiling Coverings and Coatings
Observation: The wall behind the ware-washing machine is not finished and sealed to provide a smooth, nonabsorbent, easily cleanable surface (a layer of paint is beginning to chip off).
Correction: Finish and seal this wall to provide a smooth, nonabsorbent, easily cleanable surface, and avoid possibility of paint chips flaking off into food.
- Lighting, Intensity
Observation: Several ceiling light fixtures were not functional. The cook and the sheriff's deputy stated that ballasts in these fixtures had malfunctioned, and replacement ballasts had been ordered.
Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning

Observation: The nonfood contact surface of the shelves in the reach-in cooler is not corrosion resistant, nonabsorbent, and/or smooth. The metal appears to be corroded and/or be in need of cleaning.
Correction: Nonfood contact equipment that is exposed to splash, spillage, or food soiling, or that requires frequent cleaning, must be smooth, durable, and nonabsorbent. The permit holders stated that the shelving is removed and thoroughly cleaned (power-washed) once a year. It was agreed to increase the frequency of the power-washing to at least twice a year or oftener as necessary.

Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Clean the shelves or replace them. Do not use cardboard as shelf lining or shelving.
- Temperature Measuring Devices
Observation: There was no temperature measuring device located in the new chest freezer (for ambient air temperature).
Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
- Single-Service and Single-Use Articles, Use Limitation (corrected on site)
Observation: Manufacturer containers were observed reused for the storage of food (bacon grease or similar reserved for future cooking use).
Correction: Discontinue the reuse of manufacturer containers for food storage. Provide approved reusable food storage containers designed for your food storage needs.
